Carrot Bacon
So what is carrot bacon? Well, it is just like it sounds. Carrots pretending to taste like bacon. You use liquid smoke to help give it that rich flavor as you would expect bacon to have.
It air fries right up and let me tell you it reminds me a lot of Dunkin Donuts new Sweet Black Pepper Snackin Bacon! I know that sounds insane since it is a carrot, but for someone who wants a vegan bacon alternative I highly suggest giving this carrot bacon recipe a try.
How To Cut Carrots For Carrot Bacon
You will want to slice your carrots into thinner strips as I did, using a regular vegetable peeler. If you do too thick it will not crisp up the way you want and could be a little soggy.
While you don’t have to be exact, I do recommend trying to get all your carrots sliced in the similar width.
If you have a slicer you could easily use that for even slices of your carrots. Or if you have an attachment for your KitchenAid you can use that as well.

What Are The Best Carrots To Use
You can use full size carrots that you peel and cut down or buy match sticks that you can split in half. Baby carrots don’t really work well on this recipe.

How To Store Carrot Bacon
Carrot bacon will soften a bit as it is stored. The crunch factor will kind of disappear, but it will still taste great. If you have leftovers I recommend storing in the fridge since it is mainly carrot.
If you store it you can keep it in an airtight container for up to 4-5 days. It will get softer with each day but still, be tasty. You can pop it back in the oven or air fryer to reheat and help to crisp it up again.
